Pancakes & Muffins

I ate one huge pancake at '59 Diner the other day - whole wheat with cinnamon are my favorite.


After tracking what I ate for a few days, I see that I need to eat more iron and potassium rich foods. I baked some delicious pumpkin muffins using Ellie Krieger's recipe. I added half of a cup of pecans and raisins for the added iron and potassium. My kitchen smelled like Thanksgiving!

I ran six miles yesterday and the 15 minutes of core work I did gave me some sore abs today, but a strong core will make me a better runner. Today, I rest. Have a great day!

  2. Hi Terri! Yeah, an ounce of pecans has 4% of your "daily value needs" of iron and also 2% of your "daily value needs" of calcium, which doesn't hurt either. : )

  6. I just mentioned on my post I am working on for today how I need to do core work. Another reminder here! I need to do it! I also mentioned recently how I love pumpkin! Those muffins sound delicious!

  7. The muffins sound terrific. Lots of ingredients (i'm not much for cooking) but I think I must give these a try. I've been doing a lot of core work too. I need it for sure!

  10. Glad everyone liked the pumpkin muffin idea! It's the first time I made them and I learned that those muffins are filling - a good thing. Maybe it's the whole wheat flour that does it.

    Kate, my favorite core exercise is the basic plank and that's one I did, but there are tons of plank variations if you want to make it even harder.
